The Spice: Mace
Mace comes from the fruit of Myristica fragrans. Mace has a deep, brick orange color and the flavor is similar to Nutmeg. Mace is mainly used in soups, cream sauces, lamb, chicken, cheeses, puddings and baked goods. Mace can also be used in masala, curry and rending. Originally Mace is from East India, but the primary source of Mace in Indonesia. |
