The Spice: Cinnamon

                  Cinnamon is a reddish brown inner bark of various evergreen trees and belongs

                 to the cinnamonomum family.  To form the "quills", the bark is stripped off and

                 put in the sun to dry.

                 Cinnamon has got a sweet and pungent flavor and is used in baked dishes, fruit

                and confections.  In East and Southeast Asia, cinnamon is used in moles, masala

                 and berbere.
